Thick, firm with a sweet, clean flavour. We recommended to roast or bake this dense fish from frozen. No need to defrost. We love them topped with a mixture of butter, fresh lemon juice, minced garlic and pepper flakes, or with a miso paste, soy sauce rub, and roasted in a dutch oven or heavy casserole for about 25 minutes. Simple and so tasty!
